White: its minerality makes it an amiable partner for delicate fish (fried or, better still, steamed). It is also to be enjoyed with poached eggs and seared or marinated vegetables. It goes well with soft-centred cheeses like Camembert, whose creamy texture will be nicely balanced by the slightly mineral acidity of this handsome wine. Serving temperature: 12 to 14 °C Learn More

On the palate, the wine is the definition of tensile; it's almost alive with acidity and minerality. The urgency that this wine delivers on your palate is insane. Fruit? Some. But mineral driven salinity? Loads. So luscious and mouthwatering like only mineral-driven white wine from Chablis can be. There is nothing like the mineral sap from a classic example of palate staining mineral driven 1er Cru Chablis. No where in the wine world can this be reproduced. People always say this or that is Burgundian but do you ever hear someone say that this is "Chablisien?" Sébastien Dampt is one of the bright young stars in Chablis. Learn More

Gevrey-Chambertin wines are highly colourful and potent for being Burgundies, with intense aromas and flavours evoking blackcurrant, cherry, musk and liquorice, among others. The potency of Gevrey-Chambertin wines makes it a suitable accompaniment to stews and strong-flavoured cooking, such as grilled red meat, leg of mutton, beef Bourguignon, rabbit stew, coq au vin, coq au Chambertin, and strong cheeses, including Époisses de Bourgogne.
