We import these olive oil directly from wineries that we buy wine. We import very small quantities. These are the Real Italian Oils Extra-virgin olive oil Comes from virgin oil production only, and is of higher quality: among other things, it contains no more than 0.8% free acidity (see below), and is judged to have a superior taste, having some fruitiness and no defined sensory defects. Extra-virgin olive oil accounts for less than 10% of oil in many producing countries; the percentage is far higher in the Mediterranean countries (Greece: 80%, Italy: 65%, Spain 30%).

    All our olives come from trees that are at least 100 years old and many are much older. This ensures very low yields and consequently a very good quality, far higher than that coming from machine picked olives (the majority). Our olives are only picked by hand therefore guaranteeing a far superior quality than most other oils. Hand picking ensures that any olives with even the slightest defect are discarded immediately, this guarantees that only the most fragrant and perfect olives are used.     OLIO EXTRAVERGINE DI OLIVA Our oil is produced exclusively with Frantoio, Moraiolo and Leccino cultivar varieties from our estate olive groves. Olives are harvested by hand during the month of November and crushed immediately via cold temperature mechanical extraction.
